Calkins Creamery

A lovely reflection of a French Tomme. Boasts a natural rind with straw colored paste that is slightly porous and a salty tang which produces a clean, bright finish. Daisy is produced in 4 and 8 lb wheels and naturally mold-ripened. Daisy is a bit stronger, saltier and more dry than the rest. This cheese is named in honor of the "original daisy", which was produced at the original Calkins Creamery in the early 1900's. Each sales unit contains one full pound of cheese vacuum-sealed for freshness. We recommend removing the packaging and storing this cheese in wax paper in your home refrigerator.
